BBQ Lamb Kebabs

Kebabs
  1. In a bowl, mix all the spices, chopped herbs and garlic together with the lamb mince.
  2. Next, add the egg. Season with a little sea salt and pepper.
  3. Divide into eight even sized rolls and then slide onto a skewer.
  4. Refrigerate the skewer until needed.
Feta Dressing
  1. Place all ingredients into a blender. Blend together on high speed until the ingredients have combined together. (Add a little water or yoghurt if the mixture is too thick)
Assemble
  1. Cook the lamb kebabs on the BBQ until done.
  2. Lightly warm each wrap on the BBQ and place on a flat plate.
  3. Place the lettuce, tomato and onion slices together in a line – on one side of the wrap.
  4. Next, drizzle with feta dressing.
  5. Add two lamb skewers over the dressing of each wrap.
  6. Finally, drizzle the filling with more feta dressing, roll up the wrap and serve.
